Yellow Curry Quinoa Steak Bowl

Ingredients:
For the Bowl:
1 cup uncooked quinoa
1 cup julienned carrots
1/2 cup sliced carrots
1 cup green peas
10 oz sirloin steak
1 tbsp olive oil
Salt and pepper
Yellow Curry Sauce:
1/2 cup coconut milk
1 tbsp yellow curry paste
1 tsp soy sauce
1 tsp lime juice
1/2 tsp honey
Pinch of turmeric
Directions:
Cook the Quinoa: Rinse quinoa under cold water. Cook according to package instructions (usually 1 cup quinoa to 2 cups water). Simmer for 15 minutes or until water is absorbed. Fluff with a fork and set aside.
Prepare the Curry Sauce: In a small saucepan over medium heat, combine coconut milk and yellow curry paste. Stir until smooth. Add soy sauce, lime juice, honey, and turmeric. Simmer for 5 minutes until slightly thickened. Set aside.
Sear the Sirloin Steak: Season steak with salt and pepper.Heat olive oil in a skillet over medium-high heat. Sear steak 3–4 minutes per side for medium-rare. Let it rest for 5 minutes before slicing thinly against the grain.
Cook the Veggies: In the same skillet, sauté sliced and julienned carrots for 2–3 minutes until slightly tender but still crisp. Add in curry sauce and mix. Add peas and cook for 1 more minute to heat through.
Assemble the Bowls: Add quinoa, vegetables and steak.
