Sesame Noodle Bowl

Ingredients:
Sesame Sauce:
2 Tbs sesame paste (or tahini)
2 Tbs warm water
1 ½ Tbs soy sauce
½ Tbs sesame oil
½ Tbs rice vinegar
½ clove garlic, grated
Sriracha to taste
Bowls:
8 oz Udon noodles
11 cup cooked edamame
1 cucumber, diced
10 oz cooked chicken breast
1 ripe avocado, diced
Sesame seeds, for garnish
Optional toppings: green onions, shredded carrot
Directions:
Prep the Sauce: Whisk sesame sauce ingredients in a small bowl until smooth. Adjust flavor to taste.
Cook the Chicken:Heat a drizzle of oil in a skillet over medium heat. Add diced raw chicken breast, season with a pinch of salt and pepper, and cook for 6–8 minutes, stirring occasionally, until fully cooked and browned. Add 1/4 cup of sauce to noodles and coat thoroughly. Set aside.
Cook Noodles: Cook Udon noodles according to package directions. If sticky, rinse with cold water.Toss noodles with sauce until well coated.
Assemble bowls: Divide noodles into two portions. Top each with 8 Tbs edamame, cucumber, avocado, and chicken. Sprinkle with sesame seeds and any additional toppings.
Serve: Chilled or at room temp.
