Oatmeal PB Protein Cookies

Ingredients:
3 small mashed ripe bananas
2 cups old fashioned oats
1 scoop vanilla PB whey protein
1 1/2 tsp cinnamon
3 tbs ground flax seed
1 tbs chia seeds
1/4 tsp sea salt
1 1/2 tsp vanilla extract
Peanut Butter Drizzle:
1/2 cup Peanut flour*
1/4 - 1/2 cup unsweetened almond milk
Directions:
Preheat & Prepare: Set your oven to 350°F (175°C) and line a baking sheet with a silicone baking mat.
Mix the Dough: In a large mixing bowl, mash the banana until smooth. Stir in the remaining ingredients until well combined.
Shape the Cookies: Using a small cookie scoop, portion the dough into 12 mounds on the prepared baking sheet. Flatten each cookie to about ¼ inch thick by pressing down with a greased glass or slightly damp hands.
Bake: Place the cookies in the oven and bake for 13-15 minutes, until they are slightly firm but still soft to the touch.
Cool: Let them rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Prepare the Peanut Butter Drizzle: In a small bowl, whisk together the peanut flour and ¼ cup milk until smooth. Adjust consistency by adding more milk if needed.
Finish: Drizzle the peanut butter mixture over each cookie and let it set.
