Grilled Steak Power Salad


Ingredients:

6 oz sirloin steak, cubed

1/2 red onion, thinly sliced

3 cups fresh spinach leaves

1/2 avocado, sliced

1/2 cup cherry tomatoes, halved

1 small sweet potato, cubed

1/2 avocado

1/2 cup Greek yogurt

1 tbsp apple cider vinegar

1 tbsp olive oil

1 garlic clove, minced

1 egg

Salt & pepper


Directions:

  • Grill the Steak: Season steak cubes with salt & pepper. Grill on high heat for 3-4 minutes per side or until desired doneness. Let rest.

  • Prepare the Sweet Potatoes: Toss cubed sweet potatoes in olive oil, salt & pepper, then air-fry at 400°F for 15 minutes, shaking halfway.

  • Blend the Dressing: Combine all dressing ingredients in a small blender, adding water as needed for desired consistency. Blend until smooth and creamy.

  • Assemble the Bowl: Keep each topping separate for a clean, vibrant presentation:

  • Drizzle with Dressing.
